Off the top of my head: Tinderbox and DocBook would be, for me, in addition to LaTeX, Word and Keynote transforms, the most useful. Not really sure how to tackle either of these though. Plenty of room for getting it wrong. Another one would be ConTeXt, but I imagine those using ConTeXt are probably capable of modifying the LaTeX plugin for their purposes.
