Pasting as RTF

If the app you're pasting into understands RTF then it will likely pull 
the RTF version off of the pasteboard. I believe that apps are supposed 
to prefer the richest representation that they can understand.

If you open a new mail window (in Mail) and its format is set to plain 
text then you should get the text version every time. If it's set to 
rich then you should get the RTF version every time.

I can't say what Entourage does with its mail windows or if you can 
force them into a plain text mode. If you can then I would expect it to 
grab the text version.
