OO3 Notes Styling

I'm just trying out OO3-"Amateur". I see that now Notes can be styled,
where they couldn't in OO2.

I have an OO2 outline with existing notes, and I am constantly
revising with new items and new notes. I have manually changed the
style of all existing notes, but I still get the default style for any
new notes I add. Is there some way of defining the default style for
all new notes in an existing outline? I've probably just missed it.
